He performs nutrition research on food aid and fortification, antinutritional factors and salivary proteins, and the scholarship of teaching and learning primarily focused on open educational resources. I have projects in each of these areas, as well as archived projects on carotenoids and 5alpha-reductase inhibition (finasteride, dutasteride, saw palmetto extract).
We perform basic studies to determine whether these foods and/or dietary supplements are beneficial, with the goal of helping people make informed decisions.
